Growing up in an Italian-American neighborhood in Brooklyn I’ve eaten my fair share of seafood salad in my life. It’s incredibly delicious even the not-so-great variety but I also know that there’s never enough of it. Like sushi it’s one of those expensive but light dishes that drains my wallet before it ruins my appetite.
The fourth and final recipe in my series on how to make better pasta salads. This dish serves two purposes. First to cleverly complement seafood salad with rice noodles in a way that doesn’t feel like cheating; second to show how well Asian noodles go with pasta salads.
