Stracciatella Soup – Italian Egg Drop Soup Recipe

I’ve been feeling a bit sick for the last week or so. You know that feeling when you don’t have a cold yet but it feels like you’re about to get one? That’s me. Tired a bit stiff and a bit grumpy all I want to do is curl up on the couch under a warm blanket drink some honey lemon tea and take a nap.

Stracciatella alla Romana was made for days like these. "Stracciatella" means "little scraps" in Italian which is a good description of the "scraps" of egg in this light filling soup.

Essentially the soup is hot chicken broth into which a paste of beaten egg and Parmesan cheese has been stirred and cooked. You can also add vegetables or mix some breadcrumbs or semolina into the egg mixture for some extra body.
