The kitchen is my playground and I’ve been known to spend days tinkering with multi-course meals for family and friends. Traveling always involves farmer’s market strolls and cooking classes. My go-to for weeknight meals however is the quick and fabulous one-pot meal that can feed us all in shifts if necessary. Feeding a family of five night after night was my soul-feeding ritual as my three daughters grew up. This chapter of splitting them between three schools (with matching activities) called for nourishing delicious ingenuity. Back then my EatingWell subscription answered that call.
