I always have a carton of eggs in my fridge. They are a lifesaver when I am hungry and need something nutritious that is also quick and easy to make. Usually I resort to the usual preparations either scrambling or frying. If I have a little foresight I will hard-boil a few as a gift for my future self. I peel them and season them with salt and pepper and that is enough to satisfy. But when I came across Jacques Pépin’s unique way of preparing his hard-boiled eggs I knew I had to try it.
Pépin is a culinary great known worldwide for his impeccable cooking and impressive food. So I was surprised to learn that one of his favorite meals was one that his mother made for him. It was a family favorite with a humble staple: eggs.
