Simple and easy to make with a sweet and tangy dressing that adds a refreshing bite. This recipe comes from a dear now elderly Japanese friend who was a second generation immigrant and patiently endured internment during WWII as a young girl. The cucumber salad is similar to the sunomo found in Japanese restaurants but a little more assertive. The ingredients are available in the Asian or ethnic food sections of most grocery stores in town. If you are diabetic substitute a sugar substitute for the sugar and you will get the same results. The original recipe also called for 1 teaspoon MSG.
