One of the best things about cooking pasta is the leftover starchy pasta water that’s perfect for emulsifying sauce. One of the worst things is figuring out how to quickly strain your pasta without pouring that liquid gold down the drain. Putting a bowl under a colander can be dangerous and ladling water into a separate cup is messy.
