You could say that all roads lead back to Julia Child. Well all recipe roads anyway. The celebrity chef has done more than inspire generations of cooks: Her classic French recipes have been recreated tweaked and remixed for decades. Case in point: Julia Child’s zucchini butter.

At its purest this recipe is a reduced blend of grated zucchini butter and oil and chopped shallots. Or scallions. Whatever allium you have on hand. Julia’s version is a soft creamy side dish with a nice fresh bite—it’s not overcooked so the zucchini stays bright green. (But you could also make this with yellow summer squash.) It’s easy requires no kitchen appliances fancier than a box grater and comes together in under half an hour.
