Kale and Roasted Vegetable Soup Recipe | Kaiser Permanente
This kale soup has become a winter staple in our house. The recipe is just a small adaptation of a recipe that appeared in Bon Appetit magazine years ago.
Vegetables are roasted pureed and then cooked with broth kale and white beans into a delicious hearty soup.
Of all the leafy greens kale is my least favorite; I often find it too bitter. But in this soup combined with the hearty roasted greens and butter beans it is fantastic!
