I visited the Serious Eats test kitchen in Brooklyn in October 2018 to make this video about my Korean fried chicken recipe. More than half a year later the fried chicken I made in the video looked nothing like the chicken I served at my restaurant Wursthall.

It’s also not very similar to the one I served at a San Gabriel Valley mall during a pop-up event for my first book tour. Or the one you may have seen me make on Guy’s Grocery Games. I’ve been toying with a variation on the kimchi-brined fried chicken sandwich concept for years so what you see in this recipe and video is really just a snapshot of a dish that’s still evolving. There are even two different versions in the video alone!
