Some restaurant dishes are so good that you can’t resist them if you get the chance. For me the tiger greens salad at New York-based chain Xi’an Famous Foods is one such dish. It features crisp tender celery sticks fragrant cilantro leaves and stems diagonally sliced scallions and a few strips of spicy Longhorn chiles all tossed in a sweet-and-salty sesame oil vinaigrette.

It’s the perfect complement to anything on the menu; whether you’re ordering the cumin lamb noodle soup a plate of smooth liang pi (cold noodles) or a pork burger and a load of spinach dumplings the tiger greens salad is hard to resist given how well its cool spiciness goes with everything. But I’ve always thought that if the people of Xi’an offered the greens uncooked and the dressing on the side as they do with the liang pi noodles you could take the salad home and serve it with any number of meals from almost any cuisine—a barbecue platter say or a platter of fried clams and chips or even a Japanese breakfast—and it would be just as complementary.
