Edible insects (whether they are technically insects or not) have been part of the diet of many cultures around the world throughout history. They were an important source of protein for the pre-Columbian peoples of Mexico and several varieties are still eaten today.

Entomophagy (the eating of insects) is practiced by the inhabitants of many states in central and southern Mexico including parts of Oaxaca Guerrero Chiapas Campeche Puebla and others. Today edible insects are only a common find in indigenous communities in rural areas; in urban areas this food source is somewhat less common and is often eaten only in specialty restaurants. The scarcity of edible insects in large cities—and the "gourmet" treatment given to them by some chefs—makes most insect dishes quite expensive.

Some experts estimate that as many as 500 different species of insects are used as food sources in Mexico. Here are just a few of the most well-known.
