This is a soup that hides the amount of vegetables beautifully. My kids love it. This is also the only way they like to eat salmon. It is so tender and goes so well with the leeks and vegetables that they are happy when this shows up every 2 weeks or so. Serve with crusty bread to sop up the leftovers.
