When we go camping together you get pancakes. The bigger question is what kind? I’ve been crazy about ricotta pancakes lately and decided to pack everything I needed to make these lemon ricotta pancakes during our road trip along the California coast last week. I tend to go through several phases of pancake waffle crepe but for now I’m all in. These pancakes are tender lemon-drizzled golden-edged beauties. The ricotta batter is fortified with a little almond flour and enriched with olive oil. These are pancakes so delicious and tender that two people could easily devour a whole batch. There are a few things that can make these pancakes even better – toppings and fillings. If you can eat them outside perhaps at a picnic table – go for it. I love an al fresco breakfast and was happy to have a batch of them last week. We camped on the beach in Pismo then Santa Barbara (finally visited Lotusland!) and then a few nights in Malibu – eating outside every day. I'll post some pictures below 🙂
