You’ll often find some leftover soup in my fridge. And while creamy polenta from the stove is exponentially better I usually have one of those ubiquitous tubes of polenta in the pantry. If you have those two ingredients and five minutes you can throw a meal like this in the oven. It’s for those nights when it really takes minimal effort to get dinner on the table. I like to use lentil soups ( these and these work particularly well) but the general idea is incredibly flexible.
