I love cheesecake but sometimes it can be too rich and sweet. I remember enjoying a really fluffy baked cheesecake from a local bakery when I was growing up in Puerto Rico. This is my version of that cheesecake. While it’s not quite the same it’s fluffy and delicious. Serve with a light fruit syrup to top it off!
