I think if you were to rank dishes by how intimidating they are to cook the bottom of the list would be things you throw together without a recipe every night of the week. The top would be basically everything Grant Achatz has ever made and then maybe a little bit below that would be a dish that someone you love and respect makes so perfectly that you consider it “their” recipe. It almost feels wrong to make someone else’s signature dish just to mess with it. It’s their thing not yours so you clearly can’t do it justice. I mean is there anything else you could contribute to the holiday baking curriculum maybe one of your favorites?

And this is my feeling about linzer torte all these years since we first met on this url in 2006. I am lucky enough to go to Christmas Eve dinner with a high school friend every year and her mom always includes squares of incredible linzer torte in her Holiday Baking Wonders line. Her mom is an incredible cook and baker and the one who introduced me to Maida Heatter whose books you should buy immediately and without asking any questions because her recipes are detailed without being annoyingly charming* and will never lead you astray. Seriously. I mean remember when she showed us how easy Dobos Torte could be to make? Dobos Torte. Imagine what she could do with an explosion of black truffles!

My girlfriend’s mom’s linzertorte is indeed Heatter’s linzertorte which automatically means two things: it won’t be all that difficult to make because the instructions tell you everything you need to know and it will be the best linzertorte you’ve ever made. And for me the third thing I was terrified of the entire time I finally baked it at home this week was that I was afraid I wouldn’t do justice to a favorite recipe from one of my favorite chefs.

But what I didn’t anticipate was that halfway through the baking process my apartment would be filled with the aromatic mix of walnuts cinnamon cloves and lemon zest that to me is so deliciously December. It was strange and cozy to have it in my own home instead of someone else’s and the resulting cakes were everything I remember them as: delicate and spiced firm but fragile not overly sweet and absolutely stunning. Consider this a warning: I don’t think anyone makes these just once.
