A Lowcountry boil is the southeast coast equivalent of a New England clambake. Take the fresh shellfish of the day throw it in a big pot with some vegetables and sausage and you’re more than halfway to a giant feast for you and your friends. The boils I went to as a kid were usually loaded with shrimp potatoes and corn but there can be quite a bit of variety in the pot.

In Rebecca Lang's Around the Southern Table the Lowcountry boil includes crawfish and the requisite shrimp but crab would be just as welcome. Generous chunks of spicy smoked sausage bring out the Cajun side of the mix and a big box of extra-hot boil seasoning adds even more oomph to the mix. Drain the boil and toss it on a newspaper-covered table for a fun messy meal.
