Tell someone you want chicken stew and you’ll likely get a different dish depending on who you talk to. That’s because there are chicken stew recipes across the African diaspora and while the methods and ingredients may vary they all evoke deep emotions. I caused a bit of a stir a few years ago when I took a picture of my version and posted it on Twitter. People from all over the world called me every name under the sun because what I had called “chicken stew” didn’t look like anything they were used to. The truth is chicken stews can be found anywhere there’s a chicken.
