Summer brunches on the patio practically call for something cold and fizzy. And preferably with a little kick. Classics like mimosas and bellinis are popular morning cocktails for a reason: They’re fizzy fruity and perfect for washing down a frittata and yogurt parfait. And since summer is a great time of year for mani-pedis and haircuts why not spice up these classic drinks a little?
For this updated bellini I chose lychee but you can use other fruits that are deliciously pureed. Don’t be afraid to try unusual fruits like longan or dragon fruit if you can find them. Asian supermarkets sell canned versions of these fruits (just pour off the syrup and you’re good to go) but you can sometimes find fresh lychee and other tropical delights at upscale grocery stores.
