What started out as a Croque Madame with custard instead of the usual white sauce became a Monte Cristo with a poached egg on top. I couldn’t call it a Croque Madame anymore so I turned to Twitter for help. A guy named Zap Shakur suggested I get Madame Cristo and the rest is history. Top it with poached or fried eggs and garnish with fresh chives.
