We make tacos all the time using fresh homemade tortillas. They are a game changer for taco night and so so so easy. You can make the dough in no time using masa harina which is readily available at many places. Once the dough is made (really two minutes max) it will keep in the fridge for days. I'm including the basic recipe below with a list of five favorite variations. A simple tortilla press makes for a quick/easy job (and is worth the small investment) but in a pinch I've also used a heavy cast iron skillet to press out the tortilla dough.
