½ cup room temperature coconut oil thinly sliced
Fill a saucepan with enough water to come about 1 inch up the sides. Bring to a boil over medium heat.
Combine eggs coconut oil sugar lemon juice and salt in a large bowl. Place the bowl over the saucepan so that it sits over the simmering water but does not touch it. Stir continuously until the curds are smooth and have the consistency of pudding 6 to 8 minutes.
