How to Make Mascarpone (Italian Cream Cheese) | Food Wishes
1 ½ teaspoons cream of tartar
Pour cream into a metal bowl and place over a pan of gently simmering water. Heat until warm. Stir in cream of tartar; continue heating and stirring until temperature reaches 180 degrees F (80 degrees C). Remove from heat.
Line a sieve or colander with cheesecloth and place it over a bowl. Paper towels also seem to work well. Pour the mixture into the sieve; let it drain in the refrigerator for a few hours or overnight. Spoon the resulting cheese into a clean container and use within a week. Store in the refrigerator.
