Easy mayonnaise recipe for a carnivore diet or keto diet without carbs and based on animals (2022).

While cleaning out my freezer the other day so my wife could easily get out the frozen dumplings without having to touch the alligator legs goose feet or other 'experiments' I came across a stash of rendered animal fats: beef duck and lamb to be exact.

I’m the type of cook who doesn’t like to throw anything away and of course duck and lamb fat have their uses (think duck confit burgers or roast potatoes). But seriously even I can’t think of a way to use up a pint of each and my freezer got terribly full.

Just as I was about to pack everything up and throw it in the trash I had one of those moments where all sorts of confusing images pop into your head and suddenly morph into something so obvious that you ask yourself "Why didn't I think of that?" before realizing to the joy that you just did.
