For a potato crust quiche you need… grated potatoes! We prefer Yukon gold because they keep their color better than russet which turns gray quickly. After squeezing the excess moisture out of the potatoes we toss them with olive oil salt and pepper before pressing them evenly into a pie dish.
While the crust is baking we slice the bell peppers and red onion and toss them with olive oil dried oregano garlic powder salt and pepper. Then the seasoned vegetables join the party in the oven until they are tender with caramelized edges.
