Whether or not there is a true style of sauce in a city that prefers its barbecue "dry" is a debate for the ages. I'm sure the rumblings that will follow are pretty solid is that as we move east from Kansas City barbecue sauce begins to transform from thick and sweet to the thinner tangier kind.
This Memphis style is my favorite to make at home. It has the characteristics of the sweet tomato sauce I grew up with but by reducing the sugar and adding more vinegar the result is a sauce that allows the herbs and spices to shine through and strikes a nice balance between the key defining aspects of a barbecue sauce.
