Pavo Navideño is a traditional Mexican turkey dish with a long history. During the winter solstice the Aztecs celebrated the so-called Panquetzaliztli in which the god Huitzilopochtli was celebrated for his victory over the goddess of the moon Coyolxauhqui. The main dish at this festival was guajolote the Spanish term for wild turkey.

Pavo Navideño is similar to the American turkey eaten at Thanksgiving but is often stuffed with a mixture of ground pork flavored with fruits such as apple cherries raisins and dates.

This turkey is especially popular around the holidays (Christmas) and there is often a fun competition between families to see who can make the biggest and best turkey!
