If like many Americans you grew up on ice cream made only from colored sugar water but then one day you tried a paleta full of real fruit you know what we mean when we say that Mexican ice cream is a revelation.
Mexico may not be the birthplace of the popsicle (the history of which is a bit hazy) but the country has certainly taken the making of these frozen treasures seriously. The funny thing is however that in Mexico “artisanal” paletas are not a novelty for foodies but rather an everyday occurrence. Even small towns have a paleteria a magical place where frozen treats in a myriad of flavors are made and sold to customers who must take their time deciding which one to eat on this occasion.
