As I work on a recipe for the Tex-Mex version of migas*—scrambled eggs with onion tomato chili and tortilla chips—I have to admit that there’s an inherent contradiction in trying to perfect a recipe that seems designed as hangover food. I’m not sure if Tex-Mex migas started out as a cure for a post-morning headache but I have to believe that’s one of the main appeals of a breakfast dish made with stomach-friendly ingredients like eggs and tortillas with just enough kick to blow the dust from your glued-on eyes.**
