Light and flavorful shrimp ceviche tacos
To offset my holiday envy I made these cheerful little ceviche tacos and imagined myself lying on the beach soaking up the sun with a margarita in hand.
Whitefish is "cooked" with lots of lime juice. And for a fun twist I made a vegetarian version with chopped hearts of palm that was just as (or even better) than its pesca counterpart.
You can serve them with chips as an appetizer or with tortillas as a meal… I ended up somewhere in the middle by making little mini tortillas.
