Mirepoix is a finely chopped mixture of carrots celery and onions. It is often sweated in the early stages of a recipe to enhance the flavor of sauces soups stews and countless other dishes.

Although mirepoix is usually finely chopped some recipes such as a stock recipe may call for "mirepoix coarsely chopped." "Mirepoix au gras" is simply mirepoix with meat and usually refers to the addition of bacon or ham.
