This started innocently enough; my husband recently told me that whatever magic they use to roll buffalo wings (basically lots of butter and Frank’s hot sauce) was hands down one of his favorite flavors on the planet. (I pre-packaged the jar of Nutella.) A few days later I saw an ode to buffalo wings in the form of caramel popcorn and sent him the link joking that I would probably regret it. I shouldn’t have joked. It quickly became apparent that it was an atrocity to know this popcorn existed and not make it; why be so mean Deb? Is writing a cookbook running a website occasionally cooking dinner and mashing sweet potatoes for the baby sweet potato really a higher calling in the kitchen than buffalo wing popcorn? And so I made it but it looked kind of sad and lonely in the bowl alone so then I made some blue cheese dressing to go with it with celery for dipping and lo and behold it was delicious and the story should end here.

Miso Caramel

But you don’t need me to tell you how to make Buffalo Wing Popcorn. Bon Appetit can do that for me. Instead I’ll tell you what happened next which was that miso I’d picked up for another recipe started calling to me and I remembered all the miso caramel sauces that had graced menus and recipe pages a few years ago and I had to figure out what to do with caramel corn.

It turns out to be a miraculous thing. Miso is deeply fermented salty and slightly earthy with a deep flavor that balances the buttery sweetness and faint bitterness of caramel in a satisfyingly balanced way. With the addition of nutty black sesame seeds I couldn’t put it down and was divided. Shouldn’t all stories end with a winner? In this hectic election season don’t we deserve clear conclusions? Well no it turns out. It turns out the answer to which one to make is both because why settle for 8 cups of bliss when you can have 16? You’ll thank yourself on Sunday when these disappear in a breakneck cacophony of crunch.
