Moroccan Eggplant and Tomato Stew with Herbs | Minimalist Baking Recipes
Whenever we travel abroad I always try to order eggplant dishes because I love seeing how other cultures prepare eggplant. I try to study the spice blends and cooking methods to see how they create such delicate perfectly seasoned dishes.
This recipe is a hearty stew inspired by the flavours of a Moroccan dish called zaalouk – a warm salad of cooked aubergine and tomatoes. I added chickpeas (optional) to make it more of a main course. Served with rice it is almost perfect.
My version is definitely inspired and I loved experimenting with the zaalouk concept to create something that made my taste buds sing (and hopefully yours too).
