The lemons need to be cured for at least 1 month but after that they will keep for many months in the refrigerator where their flavor will intensify over time. They are stored whole but only the peel is used in cooking the pulp is discarded. If possible use organic lemons.

Recipe for preserved lemons | Chef Moumen | Kous Kous Moroccan Bistro

1 cup lukewarm water or as needed

Scrub the lemons thoroughly under cold running water. Cut each lemon into quarters but do not cut all the way through the top so that the lemon still holds together.

Rub lemons liberally with salt inside and out and along all the cuts. Place in a large sterilized jar with a tight-fitting lid. Add lukewarm water until covered; the lemons should be completely submerged. Screw on the lid and leave to cure for 1 month in a dark dry cool place.
