The dish originates from Southern Estonia. In the second half of the 19th century people in Southern Estonia started cooking potatoes and barley together because the combination was very filling. In the last quarter of the 19th century this porridge was known throughout Estonia and a century later it became a national dish served at various official events.

Chef Janno Lepik is the brains behind Leib one of Estonia’s best restaurants. Janno began his culinary career at a local vocational school and then worked in restaurants in London. He returned to his native Estonia and is currently the head chef at Leib. Leib which means black bread in Estonian is known for sourcing all of its ingredients from local farms supporting small Estonian farmers and fishermen.
