I thought I’d show you how I take a favourite part of a recent recipe tweak it a little and transform it into something completely different. Remember the spice-rich coconut milk in this green curry porridge? Well it’s good. Good on its own. And if you have it on hand it’s a lovely starting point for a meal. It has a luxurious creaminess from the coriander and ginger that makes a brilliant addition to dressings drippings and sandwich spreads. Add some eggs and you’ve got an easy pie filling. For today’s recipe I made a version with yoghurt in place of the coconut milk and it did not disappoint. Dolloped over a simple bowl of mung beans and quinoa it created the kind of easy filling lunch I’m aiming for. A few toasted nuts and a drizzle of paprika oil add a bit of flair and textural contrast. It’ll keep you going for whatever your afternoon has in store – yoga class a bike ride work meetings or whatever.
