My family eats a lot of vegetables. Part of the reason is that our taste buds love fresh produce from the farmers market so there’s usually something green yellow or red on the table. And if I may brag part of it is how I prepare them.

When I’m not making a fresh salad or firing up the grill the most common cooking technique I use is roasting. The process couldn’t be simpler. I preheat the oven to between 350°F and 400°F depending on the vegetable brush them with olive oil and sometimes balsamic vinegar and sprinkle with salt and herbs.
