Despite the fact that I am a professional recipe developer and cookbook author who could theoretically make a ready-made meal every night we eat a lot of ready-made mac and cheese at home. You can bet that once or twice a week I will crack open a package of dried cheese and mix it with some cute little noodles heat up a frozen vegetable or chop up some crudités to serve on the side and call it a day for my kids’ dinner. They are happy I am happy because it is a win-win.

The recipe-developer side of my brain gets it done though even when I’m whipping up a pack of Annie’s. Whether it’s substituting different liquids for the milk mixed into the veggies (sadly a total no-no with my 4-year-old) or figuring out which technique makes the sauce the least lumpy I like to play around and find better ways to make the ready meal taste better.
