In 2010 I left an illustrious career as a baker at a health food store to work for my now husband’s family’s business the iconic American cookbook Joy of Cooking. One of the first projects we undertook was to test every recipe in the 75th anniversary edition of the book.
A certain youthful arrogance led us to believe we could test 2500 recipes (although we ended up going through about 1500) but the experience was a crash course in recipe development and in the history of the nearly 100-year-old book.
