My Dad's Favorite Meatloaf
This classic meatloaf recipe is one of the first recipes we put on Simply Recipes over a decade ago. Meatloaf is one of my dad’s favorite things to cook and when we kids know he’s making his own meatloaf we head over to my parents’ house for dinner.
My dad’s trick for meatloaf? He mixes Italian pork sausage (half sweet half spicy) with ground beef. The original recipe comes from an old issue of Gourmet (April 1994) and my dad has tweaked it over the years to suit his tastes (including using Italian sausage instead of regular ground pork). It’s not your average meatloaf.
The "sofritto" base of chopped carrots onions celery and garlic takes a little extra prep time but it's worth it! Like a giant Italian meatball in a loaf shape. Meatball meatloaf.
