ANTI-INFLAMMATORY FOODS | What I Eat Every Week

Eleanor is EatingWell’s editorial apprentice. She is a junior at Iowa State University majoring in journalism political science and history. While at the university she worked as an editor and reporter for the campus newspaper Iowa State Daily covering culture and lifestyle. She is the editorial director of TREND Magazine a campus fashion magazine.

If you’re like me you look in the fridge once a week and realize you have a ton of veggies to use up. And while I sometimes struggle to find ways to use up fresh produce this salad combines all of my kitchen essentials to make a delicious lunch. I like to call it my “Kitchen Clean-Up Salad”—and lately I’ve been making it nonstop.

My salad is inspired by this 5-ingredient Kale Salad with Balsamic Parmesan recipe but with a few minor tweaks. Not only is this kale salad surprisingly simple and delicious it’s also packed with anti-inflammatory ingredients. The kale peppers and healthy fats from the olive oil dressing can help reduce chronic inflammatory symptoms from conditions like arthritis which I have and help you feel your best.
