I love to cook but sometimes the question of what to make for dinner can be stressful especially during the week when deadlines and other commitments take priority. And if I’m hungry at the end of the day and have no plan for dinner I’ll raid the fridge for random ingredients in the hopes of throwing something together quickly or order takeout.

While I’m not a meal prepper you’ll find me making big pots of soup or casseroles on Sundays (if I have the time and space to enjoy the cooking process) and reheating the leftovers the next few days. When we run out of leftovers my husband and I make quicker less complicated meals like our go-to Friday night meal of black beans and rice.
