Living in the rural Midwest corn on the cob is practically a food group for my family in the summer. A few times a week we pick up fresh-picked corn on the cob from our favorite farm stand and cook it the same day.
Usually it’s simple: I like to pressure cook my corn on the cob and serve it plain because it’s so damn good but a few years ago I discovered a way to prepare it that’s unlike anything I’ve ever had before. It’s now part of our repertoire and I make it with the first corn of the season.
