“Your journey doesn’t really begin until we get to El Impenetrable” Alina Ruiz said with a giggle as we walked around her farm on the outskirts of Juan José Castelli a small town in Argentina’s northeastern Chaco province. I looked at her bewildered: I’d already taken a two-hour flight a five-hour bus ride and a private car with an overnight layover to get to her farm and restaurant. And I was still a hundred kilometers from Paraje La Armonía a village surrounded by dense dry forest where Ruíz teaches cooking classes on food and hospitality.
