I'll start by saying that I love this curry paste. But before you read any further you need to know where to buy galangal. And if you can find makrut lime leaves your curry paste will be even more delicious with them (some stores still call it kaffir lime). This is the APCP – All-Purpose Curry Paste recipe from Kris Yenbamroong's Night + Market Cookbook. It's incredibly aromatic and slightly spicy with citrus and pine notes from the garlic. I've used it in weeknight curries as a je ne said quoi note in every soup I've cooked this week and as a flavor base for a number of salad dressings (like this Rainbow Chop Salad with Peanuts). This recipe yields two cups the perfect amount to use/freeze some. I've made his vegan variation by omitting the shrimp paste seasoning and using a little extra salt or thin soy sauce. As for finding ingredients if you have access to an Asian market or grocery store start there. You should be able to find the lemongrass galangal and (maybe!) the kaffir lime leaves. Check your freezer for leaves if you don’t see them fresh. I’ll suggest substitutions below if you’re stuck.
