For a food that is so simple in some ways oats are oddly confusing when it comes to the various labels you see on packaging and the wording in recipes. Here’s the one I find most confusing: Many recipes for overnight oats oatmeal cookies and oatmeal chips call for “rolled oats” or “old-fashioned oats.”

Until recently I had no idea why a recipe would call for one thing or another. So I did some research on oatmeal and found answers that surprised me. Here's what I learned.
