Grilled Spanish Octopus – Bruno Albouze
Have you ever tried octopus? It tastes a bit like calamari but meatier which makes sense since octopus looks a bit like a giant squid.
One of my favorite dishes in the world is Mexican octopus salad or "ensalada de pulpo" with fresh tomatoes cucumbers cilantro and chili peppers. It's great as a side dish or on tacos or tostadas.
Ensalada de pulpo is often made like a ceviche the octopus “cooked” in an acidic marinade without heat. For this recipe we’re taking a different approach using a technique I learned from Hank Shaw who cooks and eats a lot of octopus.
