One afternoon near Kyoto I watched through a window as a man stood over a large flat hot griddle. He held a large spatula in one hand and with the other reached for various ingredients placed next to his workstation. I watched him for a few minutes as he placed egg-dipped cabbage on the hot grill formed the mixture into flat cakes and fried each side until golden brown. An older Japanese man walked beside me probably seeing the bewildered look on my face smiled and said to me “Japanese pizza.”
