Beetroot is in my opinion a seriously underrated vegetable. With the exception of Scandinavian and Eastern European countries where beetroot is a staple much of the rest of the world uses it quite sparingly.

This wonderful root is packed with nutrients and antioxidants and has been used for years as it is believed to help prevent and treat cancer.
It is a great source of potassium dietary fiber and phosphorus. The flavor can be a bit earthy and musky but cooked beets have a real sweetness.
Mix this with a few ice cubes good quality honey and freshly squeezed orange juice (at this stage you can add some yellow or red pepper juice for variation). I think with all that goodness this would make a delicious and healthy breakfast juice.
