We've been fans of pad Thai here for a long time. Before I tried my hand at homemade versions we used to get some form of pad Thai to go almost every week as newlyweds.

One night when John was still the manager of our downtown Portland apartment building we were given spicy tofu pad Thai and veggie spring rolls and ate them out of brown boxes with chopsticks on the floor of an empty top-floor apartment building. With runny noses and full bellies we looked out over downtown through the 20-foot windows and felt incredibly blessed for the way our lives had turned out if only for a shelter wedding and Thai takeout.
Luckily I started experimenting with pad Thai about a year after we got married mostly to save money and customize it to our preferences. Since then I’ve mastered our favorite version: chicken or tofu lots of fresh carrots as a garnish tons of peanut sauce and a ridiculous amount of sriracha.
John loves how filling and flavorful it is and how it has a load of peanut sauce in every bite. I love that it has lots of veggies a sweet savory and spicy combination of flavors and that it's reasonably healthy despite tasting completely decadent.
